- 1½ cups jasmine or basmati rice
- 3½ cups low-sodium chicken broth
- 1 tbsp olive oil
- 1 tbsp fresh ginger, grated (or 1 tsp ground)
- 3 cloves garlic, minced
- 1 small yellow onion, diced
- 1 tsp salt
- ½ tsp black pepper
- Optional: sliced scallions or parsley for garnish
Instructions
1. Sauté the Aromatics
Heat olive oil in a large pot over medium heat. Add onion and cook until soft, about 3–4 minutes. Stir in garlic and ginger and cook until fragrant.
2. Add Chicken
Season chicken with salt and pepper. Add to the pot and sear lightly on both sides (about 2–3 minutes per side).
3. Add Rice and Broth
Stir in rice and broth. Bring to a boil, then reduce to low, cover, and simmer for 18–20 minutes until rice is tender and chicken is cooked through.
4. Rest and Portion
Remove from heat and let sit covered for 5 minutes. Fluff rice gently and portion into containers.
Simple Variations
