Lemon Herb Chicken, Roasted Vegetables & Quinoa

When you’re flying, consistency matters more than perfection. This recipe is designed to be a reliable, go-to meal prep you can return to again and again—balanced, flavorful, and adaptable to long duty days, hotel reheats, and unpredictable schedules.

This is the kind of meal I recommend starting with: simple ingredients, efficient prep, and nutrition that supports sustained energy without feeling heavy at altitude.

  • Holds up well for multiple days
  • Reheats cleanly in hotel microwaves
  • If no microwave is available it can also be enjoyed cold
  • Balanced protein, fiber, and healthy fats
  • Budget-friendly and easy to shop anywhere
  • Flexible enough to swap ingredients based on what’s available

Ingredients

  • Lemon Herb Chicken
  • 2 lbs boneless, skinless chicken thighs or breasts
  • 3 tbsp olive oil
  • Zest and juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp kosher salt
  • ½ tsp black pepper
  • Roasted Vegetables
  • 2 cups broccoli florets
  • 2 cups carrots or sweet potatoes, chopped
  • 1 red onion, sliced
  • 2 tbsp olive oil
  • Salt and pepper
  • Quinoa
  • 1½ cups dry quinoa
  • 3 cups water or low-sodium broth
  • Pinch of salt

Instructions

1. Marinate the Chicken

In a bowl or zip-top bag, combine olive oil, lemon zest and juice, garlic, oregano, thyme, salt, and pepper. Add chicken and toss to coat.
Tip: Even 15 minutes makes a difference, but this can marinate overnight if prepping ahead.

2. Roast the Vegetables

Preheat oven to 425°F. Toss vegetables with olive oil, salt, and pepper. Spread evenly on a sheet pan and roast for 25–30 minutes, stirring once, until caramelized and tender.

3. Cook the Quinoa

Rinse quinoa well. Combine with water or broth and salt, bring to a boil, then reduce to a simmer. Cover and cook for 15 minutes. Let steam off heat for 5 minutes, then fluff.

4. Cook the Chicken

Heat a skillet over medium-high heat. Cook chicken 5–7 minutes per side (depending on thickness) until golden and cooked through. Rest for 5 minutes, then slice.

Flight Attendant Tips

  • Hotel reheating: Add a splash of water before microwaving to keep everything moist.
  • No microwave? This meal is just as good cold or room temp.
  • Flavor variation: Swap lemon for balsamic, add feta or olives, or use a different roasted vegetable depending on the season.

Why This Is the Starting Point

Healthy meal prep doesn’t need to be complicated to be effective. This recipe creates a foundation—once you have a reliable base meal, everything else becomes easier. You spend less money, save time on trips, and fuel your body in a way that actually supports your work.

This is the first of many recipes designed to make eating well as a flight attendant feel intentional, sustainable, and refined.
